I see what you're saying, but those early slow days are the optimum time to forage and catch bugs, not least because those are two of the many things you can level up in.When you have ten plots and four animals, it's harder to find time to forage. Plus, foraging nets you all the branches, rocks, and flowers you'll need later in the month when the architect moves in.

Yes, but that doesn't solve the problem of pushing the story forward - all you're doing there is building up your cashflow, and in the meantime, the story ain't going anywhere.
Plus, considering that shipped goods from your field bring in a huge amount more than bugs and plants, meaning that if you simply keep planting and selling crops as quickly as possible then you'll actually make way more money than if you go foraging, then it very much does make sense to keep going to bed at 8am!

A lot of the reviews for this game are inaccurate, or at least exaggerated. There's no reason to sleep at 8 a.m., as you can spend the first few days foraging and cooking before the content kicks in. If you forage and cook all day (remembering to eat) you can spend that time building up the skills and shipping insects.
