Tokyo Xtreme Racer 2 would be amazing. There's nothing out there like the Tokyo Xtreme/Shotokou Battle series, and it would make perfect sense on a mobile device. The time I would lose if TXR were ever ported...

The only one on this list that I'd really like to see is Skies of Arcadia. However I would love to see "The Floogan Brothers," that was a really fun if somewhat forgotten game that would go well IMO on mobile devices.
One thing I really wish Sega would do is add support for external controls with their more action heavy titles. Touch screen controls are great for a lot of genres but for heavy action arcade like games, you still can't beat physical controls.

Of course, the big irony is that four years ago Sega were touting the original iPhone/iPhone 3g as being "as powerful as the Dreamcast" (not too much of a stretch considering the PowerVR GPU's they all shared), yet frittered away all the good will they generated on the stage with Jobs and co demoing SMB by then proceeding to knock out cheap Megadrive ports of Golden Axe etc. and very little else of note or quality.

shenmu and skies of arcadia would be dope. space channel 5 fits in perfectly with an ios device tho
